007.10.22-IX. Protection and Handling of Finished Products
Currentness
A. Displaying and storing. Breads, rolls, cakes, candies and other food products when displayed or stored must be placed in tight cases or otherwise protected from insects, dust and handling by the public.
B. Wrapping and transporting. Before being transported, bread, rolls, cakes, candies and other food products must be suitably wrapped or packed in clean containers at the shop or plant where the product is made. All potentially hazardous foods must be refrigerated at 45° F. or less during transit.
